Intermediate Soft Sourdough Bread Workshop
This workshop is for those who already make sourdough bread and would like to explore different types of dough and shaping techniques.
Together, we’ll make soft sandwich bread, burger buns, and poppy-seed batons, working with soft sourdough doughs and learning how to handle, develop, and shape them.
We’ll place special emphasis on kneading, dough development, and shaping, and spend less time on sourdough starter maintenance, as we’ll assume that participants are already familiar with the basics.
Who is it for?
This is an intermediate-level workshop, designed for those who already have some experience baking sourdough bread and would like to expand their skills and try new types of bread.
It’s also for bread lovers who simply want to spend a few meaningful hours in a small group of like-minded people, baking, learning, and exchanging experiences.
Who will be teaching?
The workshop is led by me, Codruța – founder of Codru de Pâine, where I work exclusively with natural sourdough and slow fermentation processes, developed and refined over years of practice.
What we’ll cover
We’ll work together, step by step, focusing on:
- kneading soft dough by hand
- understanding dough development and knowing when the dough is ready
- shaping different types of bread: tin loaves, buns, and batons
- preparing the oven and baking
There will be plenty of time to ask questions, understand why we do each step, and not simply follow a recipe.
Duration
3 hours, from 3:00 to 6:00 pm
What you’ll take home
You’ll leave the workshop with:
- active sourdough starter
- freshly baked goods
- shaped dough ready to bake at home
- the recipes we use during the workshop
- and, most importantly, the hands-on experience of making your own soft sourdough breads
We’ll also enjoy tea or coffee together and bake something sweet during the workshop, with plenty of time for questions, conversation, and exchanging experiences.
Participation details
- Limited to a maximum of 10 participants
- In-person workshop, held at Codru de Pâine
- Please bring an apron – although we have extras if needed
