This is one of our Easter classics, prepared using the same sweet sourdough we use for our cozonaci and baigli, and left to ferment slowly overnight for a deeper flavor and a delicate texture.
The filling is rich and generous, made with the finest ingredients: full-fat farmer’s cheese, eggs, sour cream, butter, and a touch of vanilla, gently lifted by lemon and orange zest. Raisins add a subtle contrast and a pleasant texture.
Each pască is carefully handcrafted and baked directly on stone, giving it a beautifully rustic finish and an authentic taste.
To be honest, I never truly loved pască until I started making my own. I always felt there was too much dough and not enough cheese — so I created this version to reflect my taste, with a generous, satisfying filling at its heart.
