This vegan cake is gluten-free and sugar-free, dairy free, yet full of flavour.
The batter is made with apples, agave, and a blend of gluten-free flours that we prepare in our lab using rice, sorghum, and almond flour. The cream is made with plant-based milk (usually almond or gluten-free oat milk), orange juice, vanilla, and coconut oil.
We add small pieces of strawberry jelly for a fresh note and a gentle contrast in taste.
It’s a bright, uplifting cake — perfect for Lent, or for anyone following a gluten-free, sugar-free, and dairy-free diet, but still wanting to enjoy a slice of cake.
